This is a monaka (wafer sweet with bean paste filling) shaped with a mold into the form of the local specialty fugu (blowfish). Sweet bean paste made from Hokkaido Tokachi dainagon azuki beans, cooked in the traditional way in a flat pot over direct flame, is hand-packed one by one into wafers baked from Saga-grown hiyoku rice. No preservatives or additives are used.
