Limited time Other Pickles (tsukemono)
The signature Kyoto pickle of winter is the famous senmaizuke (thinly sliced pickled turnip).
It is said that senmaizuke tastes best when pickled around Rittō (the start of winter), when the bone-chilling cold of the Kyoto basin begins.

At Daiyasu, the Kyoto vegetable Shogoin kabura (Shogoin turnip) is shaved with a special plane, lightly pickled in salt, and then pickled with natural kelp from Hokkaido and seasonings.
The senmaizuke, sliced thin enough to be translucent, is moderately sweet, silky smooth yet crisp.
You can cut it with the kelp to a size you like and eat it as is, or make it into senmaizuke nigiri sushi.

It is a special taste available only from December to early spring each year.
After enjoying winter in Kyoto, why not take some home as a souvenir?
The shelf life is short, about 10 days, so please eat it soon.
